AAco is Australia’s largest Wagyu
cattle company with more than 1000 pure Wagyu cattle and 10,000 crossbred
Wagyu. Our stations, specialist feedlot and processing facilities
are in the state of Queensland on the east coast of Australia. Our target
is to produce 2,500 pure Wagyu and 25,000 crossbred Wagyu within the next
10 years.
We have three Wagyu beef brands:
Kobe Cuisine and Darling Downs Wagyu are used on our
crossbred Wagyu product. These brands represent the same product but
are named differently to appeal to different markets. Master Kobe is only
used to describe our very elite, high marbling purebred Wagyu.

Kobe

Downs Wagyu is widely promoted and sold in supermarkets in Korea as
well as recently finding a prominent position in the restaurant

Kobe is produced especially for VIP beef lovers around the world
that desire to consume highly marbled, authentic Wagyu beef, with
the
reassurance that it has been selected & prepared
with
care, in Australia, by Australia’s number one
Wagyu
beef producer.
Master
Kobe is the latest release in Wagyu brands from AAco. It is "luxury
beef achieved from the mastery of pure Wagyu breeding and long grain
feeding". Being produced from only the elite purebred Wagyu
with the highest marbling, supplies are not available outside of a
small list of loyal and invited users.

AAco Wagyu Marbling
Grades
A
very important element of our Wagyu business is our unique AAco Wagyu
Grading System in which loin or other primal is individually graded
against the Japanese marbling cards.
We do this so
that customers can be assured that the marbling of the beef
within each carton or order is consistent. This means everyone is able to
receive exactly what they are expecting and have paid for - no more, no
less.
The scores we
use are based on the Japanese grading system where the highest marbling is
12.
